Dollars, the bright neighbourhood deli on Exchequer Street, introduces Dollars Wine Down, their new evening experience.

By day, Dollars is a bright and stylish sandwich shop, serving up a rotating menu of classic deli-style sandwiches, soups, pastries, great coffee and fresh salads.

However, from June, the space undergoes a distinct transition as the sun sets. Every night from 6pm to 10pm, Dollars will swap its daytime focus for a laid-back, convivial atmosphere, with a curated selection of small plates, artisan Irish charcuterie and cheese, seasonal spritzes, and an exceptional lineup of natural, low-intervention and organic wines.

The venue itself keeps the same simple and unpretentious lines, with its design of stainless steel and warm timber. A long bar stretches along tall windows, making the perfect perch for watching the world pass by on Exchequer Street, and there are cosy window seats on the George’s Street side too, a relaxed summer evening option for groups of friends looking to catch up over fresh plates and a few glasses of something interesting.

The new food menu is purpose-built for casual grazing, ranging from quick, punchy snacks to more substantial plates designed for sharing. Choose from house potato crisps with a savoury gochujang and peanut whip or with Jamón ibérico and jalapeños, or snack on smoked almonds and olives. Have a selection of charcuterie or cheese, with meats including Jamón Ibérico, Corndale Farm fennel salami, and Corndale Farm coppa, alongside a premium selection of local cheese, from Ardsallagh goats cheese and Young Buck blue, to Knockanore red and smoked cheddars, and the velvety Wicklow Bán, available in selections of two pieces for €14 or five for €35.

The Gold $tandard toasty is a decadent four-cheese blend with garlic butter and Ballymaloe relish that easily translates from the day to evening menu, while a creamy burrata served with Turkish peppers and a rich, baked Cooleeney Camembert finished with truffle honey and rosemary offer something equally indulgent. Asian influences through the menu come in the form of a savoury Japanese cabbage okonomiyaki is topped with nori, tonkatsu sauce, Amarillo chilli mayo, and crispy shallots, and a curried crab and shrimp cracker brightened with green apple and cucumber. To see things off, there are two sweet options: an 80% chocolate crémeux with extra virgin olive oil and flaked salt, or a classic tiramisu.

The drinks programme has the same focus on quality and character, with a mix of brilliant local Irish craft producers and exceptional international minimal-intervention winemakers.

There’s a seasonal spritz menu full of effervescent, botanical flavours made for summer evenings. The signature Dollars Spritz combines local Valentia Island Ór Vermouth with St Germain elderflower, prosecco, and Fever-Tree soda water. Coffee lovers can try the Coffee & Tonic, blending Stillgarden Café O’Maro with cold brew and premium tonic water, and the Strawberry Vermouth & Soda mixes Chambéryzette strawberry vermouth and Wicklow Way raspberry wine. The Tropical Spagliato is a vibrant Aperol, Campari, passionfruit cordial, coconut, and prosecco blend, and the Bergamot Fizz matches Italicus bergamot liqueur with prosecco and an Earl Grey cordial. There’s a list of aperitifs too, including Stillgarden Berrissimo and Killahora Orchards Pom’O Apple Port.

The wide-ranging wine list is available by both the 125ml glass and the bottle, with diverse style profiles, both classic and adventurous.

For a lively sparkling option, pour the Estevia Blanc Pétillant from South Barcelona, a bright blend of muscat de Frontignan, macabeu, and xarel-lo, or the Joe & Berti Pet’ Nat’ from Bergerac. Skin-contact enthusiasts might choose the Emiliana Estate Animalia, a textured orange sauvignon blanc from Chile’s Casablanca Valley, or the Bodegas Attis Sitta maceracion albariño from Galicia.

White wine choices range from the crisp, floral, and aromatic Troupis Winery Fteri moschofilero from Greece to the more textured, mineral-driven Domaine Jean Philippe Padié Fleur de Cailloux from the Roussillon. Red wines are equally varied, from light, vibrant, and peppery Wachter Wiesler Bela-Joska blaufränkisch from Austria, to the rich, robust, and structured Alemani & Corrio Pas Curtei from Penedès.

Dollars Wine Down is walk-in only, with no reservations required, so snag a seat by the windows or out front on sunnier summer evenings from 6pm on Thursday, Friday and Saturday weekly.
