Did you know that éclair in French means lightning? You’ll certainly be bolting down to M&S this week to get your mitts on M&S’ first ever sharing-sized éclair.

With over 60 million search results for ‘éclair’ on Google, you can see why there’s so much talk when it comes to this elongated delicious profiterole-style pastry, smothered in chocolate and filled with cream. BUT in true ‘Lady and the Tramp’ style, you can now take an end each and tuck into chocolate heaven with not just any éclair, but M&S’ Best Ever Éclair!

To make this ginormous dessert of dreams, M&S set out on an innovative six stage process including a market leading tactic of cutting the éclair in half lengthways, to open up the pastry and allow for much more hand piped fresh cream and rich chocolate ganache to fit inside. What’s more is the chocolate fondant and chocolate lacing which have also been lovingly layered on top by hand. M&S have also carefully added in 50% more cream than ever before, and made the choux pastry casing 20% bigger to fit a combination of gorgeous rich ganache made with Madagascan cocoa and Belgian chocolate. This innovative open sided form gives a gorgeous finish unlike anything M&S have made before!

Director of Product Development April Preston said; “When it comes to creating an Our Best Ever product, we really take time to look at each element individually, to decide how we can make it even better in order to give it that magical transformation that all OBE products need. The mixture of Madagascan and Belgian chocolate we decided to use, really gives a decadent flavour and show stopping finish – it simply melts in the mouth. They’re easily big enough to share, but we won’t judge if you don’t want to.
