From Thursday 28th November, Roe & Co Distillery will open its doors for a limited-run Christmas Reimagined dining and drinks pairing experience. Partnering with celebrated chef Caomhan di Bri, the Dublin 8 whiskey-makers will offer guests the exclusive opportunity to savour his skills and creativity with an elevated four-course food and whiskey pairing menu.
Reimagining traditional dishes and flavours with contemporary festive flair, this unique experience will be delivered over two hours, across four spaces in the Distillery. Seasonal and sustainable dishes have been carefully paired with an exceptional whiskey-forward cocktail menu, designed by the award-winning Roe & Co Distillery mixologists.
Starting with canapes, guests will work their way through a reimagined Christmas Day menu, re-working traditional dishes with new techniques and flavours. From pickled herring to the finest free-range turkey and foraged cranberry sauce, expect to walk away with a fresh take on festive fine dining, inspired by De Brí’s love of the Irish landscape and the delicious produce in winter.
Accompanying drinks include a fresh bucks-fizz twist, festive red apple cocktail, intriguing whiskey tasters and an interactive spiced cider, allowing guests to tailor the ingredients to their taste.
Speaking about the event, Caomhán said: “I’m thrilled to work again with Roe & Co to create this encapsulating dining experience and challenge what Irish food, and Christmas food, should be. The food & drink pairing menu represents all the wonderful tastes and flavours I’ve discovered with my nomadic food truck, The Salt Project, as I travelled throughout Ireland.”
To wrap up proceedings, guests will have the opportunity to create their own winter warmer cocktail, bespoke to their tastes in the distillery’s Power House Bar and when the event ends, they’ll leave with a gift to remember the evening.
