This recipe is devised by Paul Watters –  author of “Simple Tasty Healthy by PW”

300g of chump steak (cut into strips)

3 carrots (peeled and cut into strips)

2 sticks of celery (cut into strips)

2 large onions (peeled and sliced)

12 mushrooms (sliced)

12 baby corn (cut in half lengthways)

1/2 bunch of spring onion (sliced)

8 baby Choy sum (cut in half)

100g mange tout

 

Sauce:

2 tablespoons of honey

1 tablespoon of dark soy sauce

1 tablespoon of light soy sauce

1 tablespoon of sweet chilli sauce

1 clove of garlic (crushed)

1 knob of ginger (grated)

1 tablespoon of hoi sin sauce

 

Heat a large frying pan or wok.

 

Add a drizzle of canola, add carrots and celery, cook for 2 -3 mins.

 

Add onion, baby corn, mushrooms and Choy sum.

 

Add a little water – this will help steam the veg and also helps prevent burning the veg.

 

Cook for a further 4 minutes, then transfer to a large bowl and bring frying pan / wok back to the stove -ensure it’s hot.

 

Add a little more oil, add the steak (chef’s tip – add a little black pepper)

 

Stir fry for a few minutes and add remaining ingredients.

 

Add sauce, mange tout and half the spring onion.

 

Cook for a further 5 minutes and serve with rice or noodles.

 

Sprinkle the remaining spring onion for added garnish and enjoy!
