Ingredients:

150g fusilli pasta

4 Chorizo Sausage (sliced)
2 cans of chopped tomatoes
1 teaspoon of smoked paprika
1 clove of garlic (crushed)
2 tablespoons of tomato paste
250 ml of chicken stock
1 medium-sized red onion (sliced)
1 red pepper (sliced)
1 green pepper (sliced)
8 cherry tomatoes (halved)
4 basil leaves
1 tablespoon of dried mixed herbs
A drizzle of olive oil
Method:
Firstly, get a medium-sized pot of water on and add a teaspoon of salt, bring it to a boil and add your pasta. Cook for approx 10-12 minutes, then strain through a fine sieve or colander.
Moving on to the main  – bring a medium-sized frying pan to medium to high heat, add a teaspoon of oil. Add the sausage, dried mixed herbs, garlic, onion and pepper and cook for approx 3-4 minutes.
Add in the smoked paprika, cherry tomatoes, tomato paste and mix well. Add chicken stock and chopped tomatoes. Bring it to the boil and simmer for approx 10 mins, then add basil. This will cook at the same time as the pasta is cooking. You can either mix the pasta through it or serve it with the pasta on top, the choice is yours to enjoy.
