Raspberry Flax Jam Yogurt Clusters

Naturally sweetened with raspberries and a touch of maple syrup, they’re a freezer-friendly snack you’ll reach for all summer long.

Makes: 4-6 clusters

Prep time: 10 minutes (plus freezing time)

Ingredients

  • 150g frozen raspberries
  • 1 tbsp maple syrup
  • 3 tbsp Linwoods Cold Milled Flaxseed
  • 200g vanilla plant-based yogurt

Method

  • Place the frozen raspberries in a microwave-safe bowl and heat for 30 seconds to 1 minute until softened.
  • Stir in the maple syrup and Linwoods Cold Milled Flaxseed. Leave to stand for 10 minutes, allowing the flaxseed to naturally thicken the mixture into a jam-like consistency.
  • Line a tray with baking parchment and spoon 4–6 small mounds of the raspberry mixture onto the tray. Freeze for at least two hours, or until completely firm.
  • Once frozen, dip each cluster into the vanilla yogurt until fully coated. Return to the tray and freeze for a further hour until the yogurt has set.
