Baileys Chocolate Easter Shakedown

Ingredients100ml Baileys Original Irish Cream
2 hollow Easter eggs (around 100g each)
6 scoops vanilla ice cream (360ml)
100ml double cream (whipped)
20ml chocolate sauce
Toasted chopped hazelnuts and chocolate flakes to garnish
Extra toppings – mini eggs, mint leaves, raspberries or a macaroon

Method
1. Carefully crack off the tips of the Easter eggs. Consume any stray chocolate shards –
no-one’s looking.
2. Blend the Baileys with the ice cream. Then pour it into the chocolate eggs.

3. Top with whipped cream, chocolate sauce, chopped nuts, mini eggs and chocolate
sprinkles. There you have it – a simply eggcellent springtime treat!

Baileys Dubai Chocolate

Ingredients

For the casing
40g White chocolate
250g Milk chocolate
For the filling
25-35g Kataifi pastry (depending on how gooey you want the filling to be)
10ml Vegetable oil
30g Pistachio paste
30g Tahini
25-50ml Baileys Original Irish Cream (again this can be adjusted to taste and texture)
10g chopped pistachio

Method
1. Toast your Kataifi in a pan with oil until it is golden brown. Remove from the pan
once cooked and set aside to cool.
2. Heat your white chocolate on a double boiler or in the microwave. Once the
chocolate is melted drizzle into your moulds using a spoon, making any playful
designs you want, and pop it in the fridge for 5-10 minutes until the chocolate has set
3. Now heat your milk chocolate on a double boiler or in the microwave. Pour your milk
chocolate into your prepared moulds and swirl it around so it coats all sides and tip out any excess chocolate back into the boil. Clear any chocolate that has spilled on
the edges of the moulds and place in the fridge to set.
4. While the chocolate is setting, it’s time to make your filling. Combine the pistachio
paste, chopped pistachios and the tahini and stir with a spatula until well mixed.
Then mix in the Baileys and the Kataifi pastry.
5. Take you moulds out of the fridge and fill with the pistachio mixtures. Now, drizzle
some more milk chocolate on top of the pistachio and smooth out with a spatula.
6. Put back in the fridge to set, and once ready, break open to see that gorgeous green
filling ooze out.

Baileys Milkshake

Ingredients

100ml Baileys Original Irish Cream
2 cups vanilla or chocolate ice cream
1 cup skimmed milk
Optional garnishes:
Chocolate syrup
Whipped cream
Sprinkles, Cookies
Anything your heart desires!

Method
1. Add Baileys Original Irish Cream, ice cream and skim milk to a blender and blend. You
can use your favourite flavour here – vanilla ice cream works well or try it with
chocolate ice cream for the ultimate chocolate fix!
2. Make sure everything is blended up really well. If it’s looking a little thick, add a tad
more milk to loosen it. Baileys also works for this.

3. Pour your milkshake into your favourite highball glass – the bigger the better!
4. Now for the fun part! Add some whipped cream and garnish to your heart’s content
for the perfect ice cream shake.
