Lidl unveils deliciously affordable meals to suit the whole family for every occasion including:

 – A mid-week dinner for less than €1 per person* (pp)

 – A two-course meal to impress your family and friends for less than €6 pp

 – An indulgent three course meal to celebrate that special occasion for less than €16 pp

 

September 2022: Lidl Ireland has revealed a range of Savvy Supper Club recipes created by the expert culinary team at Temple Bar’s Crow Street restaurant, that are sure to satisfy tastes buds as well as the purse strings. These recipes were featured as part of a recent Lidl Savvy Supper Club themed event hosted by Lidl ambassador Kathryn Thomas to mark the launch of Lidl’s new Go Full Lidl marketing campaign.

Go Full Lidl addresses the shopper misconception that they need to compromise on the quality and choice of their weekly shop as they feel the increasing effects of the cost-of-living crisis. As part of this campaign, Lidl revealed new research, conducted by Opinions Market Research, which found that 4 out of 5 people are changing their shopping behaviour in response to the cost-of-living crisis. This research found that 4 in 10 consumers are reducing their weekly spend on alcohol and sweets, with 3 in 10 (29%) and 1 in 5 (19%) compromising on their fresh meat and fish purchases respectively, in a bid to curb their weekly spending.

These Lidl Savvy Supper Club recipes demonstrate the high-quality food and wine that shoppers can enjoy when they do their full shop at Lidl. There is something to suit every occasion, without the need to compromise on quality, nutrition or value.

 

Mid-week dinner for less than €1 per person

A warm hearty dish that is sure to keep the whole family happy – and coming back for seconds! As we move into those cooler autumn evenings, this red lentil dahl with baby spinach and roasted butternut squash, pickled onions with optional yoghurt flatbread is perfect for batch cooking and freezing any leftovers.  Priced at just 87c per portion, it is sure to be a firm favourite in the months ahead.

 

Red lentil dahl, baby spinach, roast butternut squash & pickled onions

(Serves 4)

 

Ingredients:

1 tbsp oil

1 red onion, finely chopped

1 garlic clove, crushed

A thumb-sized ginger finely chopped

1 red chilli, finely chopped

1½ tsp ground turmeric

1½ tsp ground cumin

1 small butternut squash cut into even chunks

250g red split lentils

600ml vegetable stock

80g baby spinach

4 scallions sliced

Optional – serve with yogurt flatbread

 

Method:

Soak lentils in cold water and wash well.

In a large saucepan add oil, onion, ginger, garlic and fry until soft

Add all the spices & chilli

Add strained lentils and vegetable stock

Season & cook for 20 mins until lentils are soft

Separately peel and dice butternut squash, roast in oven until cooked through

Add remaining ingredients including the roasted squash

Season and serve with optional flat breads and pickled red onion

 

A Saturday night dinner party meal to impress your guests, all for less than €6

 

Whether entertaining friends or just being more adventurous in the kitchen, this two-course meal is sure to impress even the most discerning dinner guest. For just €5.48 per person, this meal features a delicious vegetarian starter using Irish courgettes, roast peppers and mini mozzarella salad finished with a drizzle of Deluxe Barrel Aged Balsamic Vinegar. The undeniable hero of this meal is the pan roasted sea bass fillet served with grilled tender stem broccoli, crushed potato & scallions, and a tomato & caper salsa.

 

Grilled Irish courgettes, roast peppers & mini mozzarella salad, toasted pine nuts & Deluxe barrel aged balsamic

(Serves 4)

 

Ingredients:

1 courgette sliced lengthways in thick strips, seasoned and grilled

1 bag of mixed salad

1 pack of mini mozzarella balls (tear balls in half)

½ jar of roast peppers, drained, and sliced in strips

½ bag of basil leaves picked

120g pine nuts toasted

½ bottle balsamic 125ml/75g brown sugar reduced in pan to a syrup and cooled

 

Method:

Toss all ingredients in a bowl and serve.

 

Pan roasted Lighthouse Bay sea bass fillets served with grilled tender stem broccoli, crushed potato & scallions and tomato & caper salsa

(Serves 4)

 

Ingredients:

2 packs of Lighthouse Bay Sea bass fillets (4 fillets)

2 Packs Potatoes baby microwave

4 scallions

1/8 bag chopped flat parsley

3 tbsp butter

2 packs of tender stem broccoli

2 plum tomatoes

½ red onion finely chopped

1/8 bag of chopped flat parsley

1 scallion, finely chopped

Optional: 2 – 3 tbsp chopped capers

 

Method:

Season the sea bass with sea salt and fresh black pepper and pan-fried skin side down first in a hot non-stick pan with some olive oil and butter, 3-4 minutes until skin is golden brown

Turn and cook for another 3-4 minutes

Squeeze 1/2 lemon juice into pan

 

For the salsa:

Quarter the tomatoes and remove seeds, then dice

Add red onion, 1 scallion and optional capers

Season with sea salt and fresh black pepper

Set aside until ready to serve

 

For the potatoes:

Boil 3-4 potatoes per person

Strain and smash with a fork

Add parsley, 3 tbsp of butter and remaining scallions, season with sea salt and fresh black pepper & serve

 

For the broccoli:

Blanch broccoli in salted boiling water 3-4 minutes

Cool immediately under cold water

Strain & Drizzle with olive oil, season with sea salt and fresh black pepper

Cook on a griddle pan until charred (alternatively roast in a hot oven)

 

 

Celebratory three course meal for that special occasion for under €16 per person

 

Whether it is a birthday, anniversary, or any special occasion, this three-course menu is sure to delight and hit the right note for celebrations without breaking the bank. Priced at just €15.60 per person, this meal features a starter of West Cork chilli & garlic king prawns with Deluxe Spanish dry cured chorizo topped with lemon and parsley. The star of this meal is Lidl’s award winning Deluxe Irish Angus 36-day dry aged striploin steak served with crispy smashed baby potato, sauteed mushrooms & onions topped with a Dundalgan Irish whiskey peppercorn cream. For those craving a little sweetness, this splash out meal is completed with a Deluxe salted caramel & dark chocolate mousse topped with fresh cream, it is a sure fire way to win any chocolate lover’s heart.

 

West Cork Chilli & Garlic King Prawns with Deluxe Spanish Dry Cured Chorizo, lemon & parsley

 

Ingredients:

2 packets West Cork prawns

1/3 Chorizo ring

6 tbsp olive oil

1 – 2 tbsp chopped red chilli

3 – 4 tbsp chopped fresh garlic

½ cup dry white wine

20g butter

Juice of 1 lemon

1/8 bag of flat parsley chopped

Optional: serve with sourdough

 

Method:

Heat olive oil in a large pan, (Make in 2 batches if your pan is small)

Add prawns & chorizo

Add garlic & chilli

Add white wine and reduce by 1/3

Add lemon juice & butter

Add chopped parsley and serve in a large serving dish or individual dishes with optional grilled/toasted sourdough

 

Char grilled Deluxe Irish angus 36-day dry aged striploin steak, crispy smashed baby potato, sauteed mushroom & onion, Dundalgan Irish whiskey peppercorn cream

 

Ingredients:

4 x 10oz Deluxe Irish angus 36-day dry aged striploin steaks

1 x white onion sliced

2 packs of chestnut mushrooms sliced

2 packs of baby potatoes

2 tbsp butter

1 tbsp black peppercorns, crushed with a rolling pin (or cracked black peppercorns)

1 large shallots, peeled and chopped

120ml Dundalgan Irish whiskey

250ml cream

1 tbsp Worcestershire sauce

 

Method:

Season the steaks with sea salt and fresh black pepper and grill to your preferred temperature

Season and sauté the mushroom and onions together

For the potatoes, boil 3-4 potatoes per person

Cool slightly

Smash with flat bottom of a saucepan or bowl

Place on a baking tray

Drizzle with olive oil, add some butter and season with sea salt and fresh black pepper

Roast in a preheated oven 180 C until crispy and golden brown 20-30 mins

 

For the peppercorn cream, soften the shallot and add pepper in a small saucepan

Add whiskey and burn off the alcohol

Add Worcestershire sauce

Add cream and reduce until slightly thicker consistency

Deluxe salted caramel & dark chocolate mousse served with fresh cream

(Serves 4, use individual glasses, cappuccino cups or a large bowl)

 

Ingredients:

350 ml cream

200g Deluxe 70% dark chocolate

50g sugar

4 egg whites

100 grams light brown sugar
2 tbsp butter

120 ml cream

1 tsp sea salt

 

Method:

Melt the chocolate

Beat egg whites and sugar together until foamy

Whisk cream to soft peak

Fold chocolate into cream

Fold in egg white to this mixture

Divide into dishes and set in fridge, Minimum of 8 hours

For the caramel sauce, combine the light brown sugar, 2 tbsp of butter, 120ml of cream and 1 tsp of sea salt in a small saucepan and simmer over low heat, whisking constantly until thickened (6-10 min)

 

To serve, put a tablespoon of caramel over each mousse. Sprinkle with sea salt.

Put a spoon of freshly whipped cream on each and drizzle with caramel.
