F.X. Buckley steakhouses has announced a significant expansion of its premium Irish beef offering, with a renewed focus on rare and heritage breeds thanks to its dedicated partnerships with farms across the country.

The sixth-generation, family-run group is committed to using 100 percent Irish beef and can trace every cut served back to its farm of origin, reinforcing its long-standing dedication to provenance, quality, and craftsmanship.

Under the direction of Managing Director Stephen Buckley, the business is increasing its investment in specialist and heritage breeds. These include Belted Galloway cattle sourced from the Brittas Estate, run by Oinri Jackson and Neville Jessop, as well as Wagyu from Ridgeway Farm in County Wicklow, run by John and Michelle Hourigan.

Belted Galloway is a traditional heritage breed known for it’s distinctive appearance. This naturally marbled beef delivers a rich, full-bodied flavour. Wagyu beef distinguishes itself with its exceptional intramuscular marbling which creates a deliciously tender cut and buttery flavour.

Alongside these premium breeds, F.X. Buckley is working with small farms nationwide and investing in retired dairy cows, supporting a more sustainable and considered approach to beef production while strengthening farm-to-restaurant relationships.

These additions will sit alongside the group’s longstanding core breeds, including Angus and Hereford, creating a broader, more diverse, and quality-led Irish beef offering across its restaurants.

This expanded approach reflects a growing focus on championing Irish producers, preserving rare breeds, and celebrating the depth and diversity of Irish beef.
