Join us in Doolally for the festival of light

From October 22nd to the 24th Doolally will celebrate the traditional festival of Diwali with a series of culinary specials created by Executive Head Chef Shloke Chhabra.

Diwali is one of the major religious festivals in Hinduism, Jainism, and Sikhism, symbolising new beginnings and the triumph of good over evil and light over darkness. The word Diwali comes from the Sanskrit word deepavali, meaning “rows of lighted lamps”. To celebrate this festival, it is tradition to light up and decorate houses, shops and public places with small oil lamps called diyas.

Diwali is a vibrant and colourful celebration, often expressed through the medium of food. Sharing traditional sweets, flavoured with fragrant sweet spices like cardamom, cinnamon, cloves or nutmeg, is customary, as well as savoury spiced snacks, which are eaten throughout the five day festival

Doolally’s Diwali specials include Tandoori Pineapple Chaat, a smoked and spiced creation served with tamarind and mint chutney, Palak Chilgoz Ki Tikki, spinach and toasted pine nut cakes, and Gulab Jamun Sundae, a traditional Indian sweet served with ice-cream and berries.

Speaking about the Diwali festival, Chef Shloke Chhabra says:

Diwali is a time of year that I always look forward to. Like any good celebration, food is at the very heart of the festivities. With my family, we traditionally gather together for prayer, followed by a grand feast, and then go outside to light up the sky with crackers.

We have developed a selection of Diwali specials for the menu at Doolally that celebrate this important festival, with dishes that I would always cook for my family, and I hope people will love!’.

About Shloke Chhabra

Shloke Chhabra is from Kolkata, West Bengal in India. His culinary career started over twelve years ago, when a part time kitchen job led him to pursue a formal degree in Culinary Arts. Through his studies he undertook formal training with the renowned Oberoi Hotels Group, gaining in-depth knowledge in the field of Asian and Western cuisine. Shloke was subsequently one of only ten chefs from all over India to join the Management Training Programme with ITC Hotels. With over 100 hotels, it is India’s fifth largest hotel chain and is a part of the ITC Limited group of companies. Shloke progressed with ITC hotels over a period of six years, working across their different properties such as ITC Grand Bharat, ITC Maratha & ITC Kohenur, all part of the Luxury Collection chain, gaining accolades and awards as he went.

Shloke was head hunted by Chef Alfred Prasad to lead the team at Doolally when it opened in September 2019. Following a relocation to Ireland, Shloke has lead the team at Doolally as the Executive Head Chef, working collectively to be the best premium Indian restaurant in the country, where his main focus is ‘quality, quality and quality, and making sure we provide our patrons with the finest Indian cuisine using the freshest local produce of this beautiful country, Ireland’.
