Nearly a decade after opening their first restaurant in Ireland, BuJo Burger is preparing to launch its most ambitious venture yet – a 5,500 sq ft flagship restaurant at Central Plaza, on Dame Street, Temple Bar – located within the iconic, former Central Bank Building designed by architect Sam Stephenson. Spread across three floors, BuJo Central Plaza will create 37 new jobs, more than doubling BuJo’s current workforce in Ireland.

With capacity for 150 diners, the new restaurant is designed to make the most of its outdoor spaces with a sheltered ground-floor terrace from opening, while plans are already in place to add a second outdoor terrace and roof garden on the first floor at a later date. One of the venue’s standout attractions will be its live-action Sharing Table — an immersive dining experience that places guests at the heart of the kitchen action. Accommodating up to 10 diners, the table overlooks a bespoke grill specially imported from Venice, Italy, offering a front-row view of BuJo’s signature chargrilling technique.

Alongside its impressive burger-led menu, BuJo Central Plaza will become the first restaurant location in the group to offer a dessert menu and highly considered breakfast menu featuring a signature BuJo Breakfast Sandwich, high protein breakfast bowls, freshly squeezed orange juice and premium coffee from award-winning Velo Coffee Roasters in Co. Cork. Breakfast service will initially operate Friday to Sunday, expandng to additional days following the launch period. BuJo’s limited edition burgers will also be a feature of the flagship restaurant, reinvented every eight weeks with the same restless energy that built the menu in the first place. Chef-led, no filler ideas, no lazy choices.

As with all BuJo locations, creating the menus for the new BuJo Central Plaza has been a truly all-Ireland effort, with ingredients sourced from a carefully selected network of trusted Irish producers. Beef is supplied through BuJo’s own butchery in Watergrasshill, Co. Cork, while chicken comes from Manor Farm and pork from Loughnanes in Co. Galway. The restaurant’s signature brioche buns are baked by Coughlan’s Artisan Bakers in Co. Kildare, with dairy products sourced from the multi-award-winning The Village Dairy in Co. Carlow.

This commitment to local sourcing ensures the highest quality ingredients while supporting Irish producers at every stage of the supply chain. BuJo’s drinks offering has also been carefully curated, with a strong focus on Irish producers. The beer selection has been sourced exclusively from local breweries, including Changing Times Brewery in Glasnevin and Wicklow Wolf in Co. Wicklow — an independent, B Corp-certified brewery. The wine list has been developed in partnership with The Wine Lab in Co. Kildare.

“Every BuJo burger is made using a unique blend of four prime cuts of grass-fed Irish beef, seasoned simply with salt and pepper to let the quality of those ingredients shine. Crafted at our Centre of Meat Excellence in Co. Cork by expert butchers and chefs drawing on generations of beef knowledge and culinary expertise, each burger is designed to deliver an exceptional eating experience. The result is a burger that is rich in flavour, deeply satisfying and unmistakably BuJo. We are incredibly proud of what we have created at Central Plaza and cannot wait to welcome customers through our doors next month to experience it for themselves.”
