Ingredients : Serves 4
spray oil
500g extra lean minced beef
1 red onion, grated
2 garlic cloves, crushed
1 chilli, deseeded and finely chopped 1 tsp ground cumin
1 tsp ground coriander
a handful of coriander, chopped
1 large onion,
cut into rings or wedges
2 red peppers, deseeded and cut into chunks or rings
240g brown or basmati rice (un- cooked weight)
salt and freshly ground black pepper
Spicy mango salsa:
1 large ripe mango, peeled, stoned and diced
1 small red onion, diced
3 tomatoes, diced
1 red chilli, sliced
a handful of coriander, chopped juice of 1 lime
sea salt
Method :
Make the spicy mango salsa: mix all the ingredients together in a bowl, adding salt to taste.
Put the beef, onion, garlic, chilli, ground spices and coriander in a bowl with some salt and pepper. Mix together well and then, using your hands, mould the mixture into 12 sausage shapes. Thread them onto skewers and spray lightly with oil.
Cook the koftas, with the onion and red peppers, on a hot barbecue, turning them occasionally for 6–8 minutes until browned and slightly charred.
Meanwhile, cook the rice according to the instructions on the packet. Serve the koftas and barbecued peppers and onion with the rice and some spicy mango salsa.
TIP: You can use wooden or metal skewers. If using wooden ones, soak them in water first to prevent them burning on the hot barbecue.
