What better way to celebrate the Bank Holiday weekend than with a barbecue? Vibrant and bursting with summer flavours, AVOCA has created the perfect salads to serve up as a veggie alternative or to accompany any BBQ dish this weekend.

Ingredients:

  • ½ a large red cabbage, shredded
  • 2 carrots, shredded
  • 1 small fennel, finely sliced
  • 100g Edamame beans
  • 2 spring onions, finely sliced
  • 10 radishes, finely sliced
  • 10g each black and white sesame seeds
  • 1 bunch fresh coriander, chopped
  • 1 large red chili, sliced
  • Sea salt and black pepper to taste
  • Sesame and maple dressing
  • 20ml maple syrup
  • 20ml red wine vinegar
  • 20ml sesame oil

 

Method:

  1. Mix all the vegetables in a large bowl, drizzle over dressing and toss together until well coated.
  2. Season to taste with sea salt and black pepper.
