This January, Knockranny House Hotel & Spa in Westport invites whiskey lovers to an exclusive winter retreat celebrating two of Ireland’s most exciting distilleries. The Whiskey Experience Weekend brings together Dingle Distillery and Donegal’s Sliabh Liag Distillery for an intimate two-night escape filled with discovery, flavour, and the warm welcome for which Knockranny is renowned.
Beginning on Friday evening, guests gather for an arrival drink at 7.30 p.m. before joining Dingle’s Head Distiller, Paddy Foley, for an exclusive whiskey tasting at 8 p.m. Paddy will guide guests through five expressions of Dingle’s whiskey, including two brand-new releases being introduced in Ireland for the very first time. Light bites will be served during the tasting, complemented by a fascinating presentation on Dingle’s distilling heritage and the story behind its celebrated whiskeys.
On Saturday evening, the spotlight turns north to Donegal, as Sliabh Liag Distillery owner, James Doherty, hosts a pre-dinner tasting featuring five distinctive whiskeys that capture the spirit of the county’s wild coastal landscape. Each pour will reveal a different facet of Donegal’s emerging whiskey identity, from smoky maritime notes to rich, rounded malts.
Following the tasting, guests will dine in the Round Room of The Fern Grill, where Executive Chef Seamus Commons has created a special menu designed to complement the weekend’s whiskey explorations. Dinner is served on an individual booking basis, allowing guests to enjoy the evening at their own pace in one of Ireland’s most elegant dining rooms.
The Whiskey Tasting Weekend at Knockranny House Hotel & Spa is available from €329 per person sharing (in a Classic room) and includes two nights’ bed and breakfast, dinner on one evening, and two guided whiskey tastings hosted by the distillers themselves.
