GastroGays have created their ULTIMATE picnic sandwich: the Coronation Chicken Club, a delicious doubling up of two sandwich classics in-one!

Grab all the ingredients you need from your local Marks & Spencer, your one-stop shop for all your picky bits and picnic needs this summer, whatever the weather and wherever the location, from the park to the beach, on a hike or happily in your own garden.

 

CORONATION CHICKEN CLUB SANDWICH

Makes 4-6 sandwiches
 

Ingredients:

•          3-4 M&S boneless, skinless Oakham Gold higher welfare Irish chicken breasts

•          1 large farmhouse loaf, thickly sliced (or bread of your choice)

•          10-12 Irish Dry Cure Bacon Rashers

•          Irish tomatoes on the vine

•          Irish butterhead lettuce

•          M&S Coronation Sauce

•          M&S Salt & Vinegar or Roasted Garlic Mayonnaise

•          Flaky sea salt

Method:

1.      Bring a pot of water to the boil, add in your chicken breasts and then reduce to a simmer for 15-20 minutes or until the internal temperature reaches over 75ºC. Remove the chicken breasts and allow to cool slightly.

2.      Meanwhile, heat the oven to 170ºC fan and lay your bacon slices close together on a baking tray lined with parchment or silicone mat and bake for 25-30 minutes, turning once until the fat has rendered and started to go crisp. Leave to one side to cool.

3.      Shred the chicken breasts using two forks or by pulsing with a hand mixer in a large mixing bowl. Mix 150-250ml of M&S Coronation Sauce using tongs to fully coat the shredded chicken.

4.      Each sandwich requires three slices of lightly toasted bread, each spread with your choice of mayonnaise (M&S Salt and Vinegar or Roasted Garlic mayonnaises are brilliant here to add extra flavour).

5.      Begin assembly with the first slice, topped with a layer of butterhead lettuce (or greens of your choice) and followed by four, thickly cut tomato slices. Sprinkle with flaky sea salt to season.

6.      Then follow with the next bread layer, top with a generous spoonful or two of the coronation chicken mix, ensuring an even layer, followed by a layer of bacon and finish with the last slice of bread.

7.      Wrap tightly in parchment paper so you can transport easily and cut down the middle when ready to serve. Enjoy with your personal selection of M&S picky bits.
