The Grace, Westport Estate is pleased to announce the appointment of Martin O’Donnell as its Executive Chef. A Galway native, Martin will lead the hotel’s dining vision, crafting a culinary experience that reflects the natural abundance and cultural richness of the West of Ireland.

With over two decades of experience shaping some of Ireland’s top kitchens, Martin brings creativity, passion, and a deep respect for local producers to his new role. A graduate of GMIT’s Culinary School, he has spent his career celebrating modern Irish cuisine rooted in regional authenticity.

In previous roles, Martin helped earn two AA Rosettes for creative excellence and numerous national awards, as well as being named Best Chef in Connaught at the 2024 Food & Wine Awards.

Renowned for his modern Irish style and his commitment to local sourcing, Martin’s food celebrates the spirit of the land and the producers who work it. His appointment at The Grace, Westport Estate aligns perfectly with the hotel’s culinary philosophy, to showcase the flavours of Mayo and the Wild Atlantic Way through seasonally inspired, regionally grounded dining.
