As work continues on Ómós, the new guesthouse and restaurant opening in Abbeyleix in summer 2026, chef Cúán Greene and his team are offering a way for early supporters to become part of the story before the doors open.
From 26 November, gift vouchers are available to purchase at www.omos.co – a thoughtful Christmas gift for the food lovers, curious travelers, and supporters of Irish craft and hospitality in your life.
Those who purchase vouchers now will receive priority access to reservations ahead of the general public when bookings open next year, giving them the first opportunity to experience what’s taking shape on the edge of Abbeyleix.
“We’re building something with real care and intention,” says Cúán, “and these vouchers are a way for people to support that vision early, and to be among the first through to sample Ómós hospitality when we open. It feels right to give those who believe in what we’re doing that opportunity.”
Set on 4.2 acres just outside the heritage town of Abbeyleix, Ómós will be a 16-bedroom guesthouse and 40-seat restaurant opening in summer 2026. Led by Cúán Greene — an alum of Noma and Geranium in Copenhagen — the project brings together Irish craftspeople, designers, and makers to create something that feels rooted, warm, and lasting.
The name Ómós means homage, duty, and respect, reflecting the intention to create something with soul that belongs to its neighborhood and community. The location features a restored Victorian home and purpose-built contemporary restaurant, with a one-acre millpond, walking paths, walled gardens, and a regenerative farm.
Cúán will serve inventive but grounded, producer-driven food with an emphasis on deliciousness and sustainability. “Ómós is, in a way, the sum of my experiences so far,” he says. “Celebrating what we find here now, and the connections made through food while working and traveling away. Ómós is what I’m bringing home.”
