Hilton Garden Inn Dublin City Centre unveils Honey Fitz, a new culinary destination in the heart of Dublin’s city centre, offering a delightful fusion of Irish and American flavours
March 2025 – Following a €1.5m investment, Hilton Garden Inn Dublin City Centre has opened its doors with a new show stopping venue, Honey Fitz. Named after John Francis “Honey Fitz” Fitzgerald, Boston’s first Irish American mayor and the grandfather of former U.S. President John F. Kennedy, Honey Fitz celebrates the deep cultural connections between Ireland and the United States, fusing timeless traditions with contemporary influences.
The distinctive and locally sourced menu, curated by Kevin Garrigan, Head of Culinary Development at Honey Fitz, stands out for its unique blend of Irish and American flavours at breakfast, lunch, and dinner. Highlights include the Braised Irish Beef Feather-Blade with mustard creamed potatoes and red wine jus, and Boston-inspired classics such as Clam Chowder, made with smoked haddock and bacon. The Cote De Boeuf for two is a notable centrepiece, with lighter options available such as the Honey Fitz Salad with truffled honey and baked goat’s cheese.
The drinks menu complements the food with carefully curated cocktails, including the signature Fitz Aperol and The Boston Bull – a cask aged whiskey and buttery maple syrup.
The interior and architectural design embraces a sophisticated art deco aesthetic with marble countertops, checkerboard flooring, velvet banquette seating and opulent lighting. The space is divided into several distinct areas, including a refined bar, the restaurant itself, coffee shop Roasted Notes, and the Winter Garden, with its lush greenery and blue tones. Every area has been designed to offer a welcoming atmosphere, and whether stopping by for coffee, a leisurely lunch, or an evening meal, Honey Fitz provides a colourful and charming setting.
