Dublin, Ireland  After a transformative redevelopment by Google, one of Dublin’s most iconic historical landmarks, Bolands Mills, comes alive again as Grindstone Speciality Coffee becomes the very first business of this historical regeneration to open its doors to the public. 

Grindstone is located at street level within one of the original flour mill structures on Dublin’s docklands. It boasts a warm and welcoming space that stays true to the character of its surroundings. Industrial textures like exposed brick and steel beams are paired with modern Scandinavian finishes, creating a relaxed atmosphere for both workers and local residents.

The historic Bolands Mills landmark sat  largely untouched from 2001 until it was purchased by Google in 2018. Now, in 2025, Bolands Mills begins a new chapter. A unique mix of community spaces, waterfront squares, and locally born businesses spanning food and drink, wellness, and beauty are opening to the public.

Offering Dubliners a much-needed specialty coffee experience, Grindstone serves an exceptional selection of 3fe Coffee alongside guest roasters like Blind Monkey. Complementing its coffee offerings, Grindstone proudly features the legendary toasted sandwiches from Lón, a curated menu of artisanal food from Margadh, Medialuna, Village Dairy, and Goat’s Oats, and drinks and dishes served on stunning handmade Araucaria Ceramics cups and plates.

Located along the scenic banks of the Grand Canal, Grindstone Specialty Coffee is open Monday to Friday from 7:30am to 3pm, and weekends from 9am-3pm.
