FULL RECIPE: Beef Pot Roast with Cranberry Sauce

Ingredients

  • 1 kg topside beef
  • 1.4 l cranberry juice
  • 300 g dried cranberries
  • 20 g sugar
  • 200 g celeriac
  • 6 shallots
  • 80 ml balsamic vinegar
  • 40 ml gin
  • 300 ml red wine
  • 1 bay leaf
  • 10 juniper berries
  • 80 g walnuts
  • 2 tbsp starch
  • Salt
  • Vegetable oil (for frying)
  • Rosemary (for garnish)

Method

  1. Preheat the oven to 160°C conventional mode. Peel and dice celeriac and shallots. Heat vegetable oil in a roasting pan on the hob. Sear beef for 2–3 minutes per side. Add celeriac and shallots, sauté briefly, then deglaze with balsamic vinegar, gin, and red wine. Add bay leaf, juniper berries, and some cranberry juice.
  2. Transfer pan to NEFF oven and roast for ~2 hours. Cover for the first 90 minutes, then remove the lid for the final 30 minutes for a golden crust.
  3. For the cranberry sauce, cook dried cranberries with cranberry juice and sugar for 5 minutes, then puree until smooth.
  4. Remove roast from oven and let rest. Toast walnuts for garnish. Slice beef, serve with roasted vegetables, drizzle with gravy, and top with cranberry sauce and toasted walnuts.

FULL RECIPE: Mini Vegan Beetroot Wellingtons

Ingredients

  • 6 small beetroots
  • 2 vegan puff pastry sheets
  • 1 shallot
  • 1 clove garlic
  • 100 g brown mushrooms
  • 2 tbsp margarine
  • 50 g hazelnuts
  • 10 g thyme
  • Salt, pepper

Method

  1. Preheat oven to 180°C CircoTherm®. Rinse beets, cover in salt in a baking dish, and roast for ~40 minutes. Let cool, then peel.
  2. Dice shallot and garlic. Cube mushrooms. Melt half the margarine in a pan, sauté mushrooms, shallots, and garlic for 10 minutes.
  3. Toast hazelnuts, pulse in a food processor, and mix with mushroom mixture and thyme. Season with salt and pepper.
  4. Roll out puff pastry, cut circles to match beet size. Place mushroom mixture in the center, add a beet, and fold pastry around it. Brush with remaining margarine and bake at 180°C for 30 minutes or until golden. Serve warm.
