AVOCA’s Grilled BBQ Chicken & Avocado Tacos are the perfect build-your-own style meal to enjoy this Bank Holiday Weekend. Why not cook up these flavour-packed tacos as a tasty weekend lunch with the family.
Serves 4-6
Ingredients:
2 chicken breasts
100ml of your favourite BBQ sauce
1 knob of ginger, minced
2 cloves of garlic, minced
1 tsp ground cumin
60 grams cabbage, shredded
1 lime, juiced
1 tsp olive oil
Small bunch of parsley, chopped
1 mango, diced small
1 red chilli, chopped finely
½ red onion, chopped finely
Small bunch of parsley chopped
2 avocados, crushed
1 lime, juiced
2 plum tomatoes, diced
1 tsp olive oil
Garnishes:
Crème fraiche or sour cream
Hot sauce
Tortillas
Lime wedges
Method:
Marinate chicken with BBQ sauce, garlic, ginger, cumin, salt & pepper.
Grill over high heat until thoroughly cooked through. Shred with 2 forks into large pieces.
Mix all the ingredients for the slaw & set aside.
Mix all the ingredients for the mango salsa & set aside.
Mix all the ingredients for the guacamole, season with salt & pepper & set aside.
Warm the tortillas over the grill to slightly blacken, this gives a wonderfully smoky flavour.
Arrange everything in bowls & serve family style. Enjoy!
