Turn up the barbecue and celebrate spring with Weber’s delicious lamb cutlets recipe, flavour-packed with north African spices.

INGREDIENTS:
For the spice paste:
2-3 crushed garlic cloves
5 tbsp chopped coriander leaves
5 tbsp chopped fresh basil
2 tbsp sherry vinegar
1 ½ tsp sweet paprika
¾ tsp sea salt
¾ tsp ground cumin
⅛ – ¼ tsp cayenne pepper or ground black pepper
5 tbsp extra-virgin olive oil
For the lamb cutlets:
2 tsp ground cumin
1 tsp sea salt
1 tsp ground black pepper
16 lamb cutlets, each 2cm thick, meat and bones trimmed of excess fat
Extra-virgin olive oil
1 lemon, sliced (optional)
IN THE KITCHEN:
- In a bowl, whisk all the ingredients for the paste together until smooth and emulsified. Alternatively, make in a food processor, slowly adding each ingredient, starting with the garlic, coriander, basil and so on.
- In a small bowl, mix together the cumin, salt and pepper. Lightly rub the lamb cutlets, on both sides with oil and season all over with the cumin mixture, pressing lightly to adhere. Let stand at room temperature for 15-20 minutes while you prep the barbecue.
AT THE BARBECUE:
- Prepare the barbecue for direct and indirect cooking at a high heat, approx. 230 -290°C.
- Grill the cutlets over grilling / direct high heat with the lid closed, until cooked to your desired doneness. 3-5 minutes for medium rare (51°C – 54°C), turning once.
- If flare ups occur, move the cutlets to roasting / indirect high heat, until the flames subside and add a minute or so to your cooking time.
- Remove the meat from the barbecue, then whisk the paste to emulsify it again.
- Brush the paste on both sides of each cutlet. Serve the cutlets warm. If desired, garnish with lemon slices.
