Ingredients : Serves 4

spray oil
1 onion, chopped
a handful of coriander
lime juice
4 cloves of garlic, finely chopped 1 tbsp fresh ginger, grated
400g Sweet potatoes, diced
3 carrots, sliced
4 tomatoes, chopped
a handful of green beans
1 tbsp curry powder
1 400ml tin low fat coconut milk 100ml Vegetable stock

 

Method :

Spray a saucepan with oil and place on medium heat. Add the onion, garlic, ginger, sweet potato and carrot and season. Cook until soft for about 5 minutes.

Add the curry powder, vegetable stock, coconut milk. Bring to a boil then leave to simmer till the sweet potatoes and carrots are almost cooked. Add the green beans and tomatoes but be sure not to overcook them.

Taste and season if needed. Add some chopped coriander and a squeeze of lime juice. Serve with basmati rice.
