Sheen Falls Lodge is delighted to announce the next instalment of the Four Hands Dinner Series, taking place on Bank Holiday Sunday, 1st February 2026, with a collaboration that brings together two of the most accomplished chefs working in Irish fine dining today.
For this highly anticipated evening, Mark Treacy, Executive Head Chef of The Falls restaurant at Sheen Falls Lodge, welcomes Lewis Barker, Executive Chef of the two Michelin star restaurant Terre at Castlemartyr Resort. The eight course dining experience will be served in The Falls restaurant and will present a refined expression of contemporary cuisine shaped by seasonality, provenance and world class technique.
Together, both chefs will create a menu that celebrates the finest Irish produce through a Michelin level lens, uniting classical foundations with modern precision and creative restraint. Each course will be designed to highlight purity of flavour, textural balance and the natural integrity of exceptional ingredients, presented with elegance and clarity.
Chef Lewis Barker brings a globally informed perspective to the collaboration, shaped by an international career across Michelin starred kitchens in Europe, Asia and Australia. Rooted in classical French technique and refined through years spent in Asia, Chef Barker’s cuisine is guided by balance, restraint and a deep respect for the land and the people who nurture it. At Terre, the Irish landscape sits at the heart of every dish, with inspiration drawn from Cork’s coastal waters, local growers and artisan producers.

Lewis Barker
Lewis Barker is the Executive Chef of the two Michelin star restaurant Terre at Castlemartyr Resort. A British born chef with an international career, Chef Barker earned his first Michelin star at Sommer in Singapore just six months after opening, retaining the accolade for four consecutive years. His professional journey has included acclaimed kitchens such as Maaemo in Oslo, Quay in Sydney, Vue de Monde in Melbourne and Anthony’s Restaurant in the United Kingdom. His cooking style is defined by classical French foundations, precision and balance, enriched by influences from years spent cooking in Asia, with a philosophy centred on provenance, seasonality and craftsmanship.
About Executive Head Chef Mark Treacy
Executive Head Chef Mark Treacy has overseen the culinary direction of Sheen Falls Lodge since 2021. Originally from County Clare, Mark has worked in some of Ireland’s most distinguished kitchens, including Dromoland Castle, L’Ecrivain, Thorntons and The Greenhouse. His vision combines French-inspired techniques with the richness of Irish produce, much of it grown in the estate’s gardens, resulting in refined dishes that celebrate both tradition and innovation.
