He’ll be showing us how to make your own version of popular takeaway dishes too – think delectable golden scampi, crispy duck pancakes, messy but delicious chicken wings and posh kebabs.
His ever-popular “How To Perfect” segment is back and sweeter than ever, as Mark shines spotlight on baking and will present a step-by-step demo on how to guarantee the perfect Victoria sponge, Chocolate Brownies and so much more. As an accomplished pastry chef, Mark will also be showing us all the potential pitfalls we come up against in baking too.
In a new addition this series, Mark will show his “tray of fails” – demonstrating the most commonly made mistakes that are made when home baking. Whether it’s undercooked brownies, soggy bottoms or scones that are more like stones, Mark has essentially made the mistakes so you don’t have to and will give you all the tips and tricks you need know to avoid any flops!
Mark says: “In this series, I wanted to go back to the basics and bring you some of the dishes that I learned to perfect in my early days as a chef. These are the recipes I still hold very close to my heart.”
In episode one, Mark will make his Risotto Cacio e Pepe. Mark shares his secrets to achieving the perfect creamy texture and rich flavour in under 15 minutes! Next, it’s time for Minestrone soup, a hearty and healthy dish that’s perfect for a cold winter night or a working-from-home lunch.
For those looking for a little treat without phoning the takeaway, Mark shows us his take on Butter Chicken, a classic Indian dish that’s sure to impress. He walks us through the process of marinating the chicken and making the tomato-based sauce from scratch, as well as offering tips for adjusting the spice levels, depending on personal preference.
In the “How to Perfect” baking segment, Mark shares his failures on his “fail tray” while showing us how to make the perfect chocolate brownies, from selecting the right chocolate and oven temperature to achieving the ideal fudgy texture.
