    Launch of Preston’s Restaurant At Bellinter House Hotel & Spa,

    A new restaurant offering is to open at Bellinter House Hotel & Spa this March, creating an elegant and stylish dining space, called Preston’s. Preston’s  restaurant is located in the Main House on the lower floor, and is decorated in shades of warm deep blue velvets  and greys, with brass accents, custom-built panelling, statement lights, and beautiful bronze mirrors that reflect the light.

    While the dining setting may have changed, the distinct flavours on the menu remain at the same high standard as always. Customers can enjoy starters like, Listoke Gin Cured Salmon, with Horseradish Mousseline, Watercress & Radish, €14.50, and tasty main course dishes such as,  Andarl Farm Free Range Pork Belly, with Smoked Irish Black Pudding Mash, Celeriac Puree & Pickled Orchard Apples €23.50. Curated dishes that are guaranteed to tantalize your taste buds. With a love of locally sourced and fresh produce, our talented Chef Stephane Moreau takes dining to the next level. 

    The menu is complemented by its tastefully  chosen wine list, wines like Auntsfield Single Vineyard Sauvignon Blanc, this beautifully handcrafted wine, offers scents of passion fruit and citrus flavours , and the Cedro, Fattoria Lavacchio, Chianti is ripe plum in colour and has a lot of earthy mineral aromas and flavours. Bellinter House is recognized for its exceptionally high standards in culinary excellence and consistently awarded the 2AA Rosette.

His weekends were spent in kitchens alongside Raymond Le Blanc and Gordon Ramsey as well as reputable Bakeries and Butchers gaining invaluable experience he applies throughout his professional career in the kitchen. Beginning his career in fine dining restaurants and hotels, in the beautiful scenic region of the Cotswolds, England. Daniels plan was to temporarily re-locate to Ireland in 2003 after finishing work in a 2 Michelin Star restaurant he wanted to recharge his batteries and focus on his international travels. His mother a Waterford native and father a Londoner were building a house in Mayo in which he lent a hand and fell in love with Ireland. The rest is history…

    Daniel is classically trained in French Cuisine; but during his life travels he has gained further skills not only about cooking and preparing food but also in the understanding of methods and use of ingredients. His strong passion for all elements of cooking have led him to develop garden and estate grown produce reinforcing his ethos of using only locally sourced produce and home grown ingredients for his dishes. Throughout Daniels career he has grown and developed businesses from small operations to successfully achieving Michelin BIB Gourmand status.

  • Our steak restaurant hasn’t been here long, but the building has. First conceived as the grand HQ of Ireland’s National Bank, today it makes a special place for our steak and seafood on College Green. The decorative 40-foot cast-iron dome above our main dining room certainly sets a stately tone; our elegant bar and private dining rooms, too.

    We’re easy to find, just next to Parliament Square and Trinity College, and a short walk away from Temple Bar and Dublin Castle.     Sunday roasts at Hawksmoor aren’t just a meal – they’re a full-on feast and a beloved tradition among regulars who bring their nearest and dearest to settle into the buzz. Fair warning: this is not a nibble and dash. Think hearty, comfort-heavy plates, especially if you’re tempted by the sides. The cauliflower cheese is a crowd favourite – you’ll see why.

    Now, for those looking to really dive in, there’s our Sunday feasting option. The regular dry-aged rump swaps out for a kingly sharing steak – handpicked by you from the blackboard and cooked the way you like it. Then we pile on the trimmings: beef-dripping roasties, towering Yorkshire puds, carrots, greens, roasted garlic, and a tidal wave of bone marrow & onion gravy. Best to book ahead, though – Sundays fill up fast.

    The Lennan’, at Lennan’s Yard fronts onto the iconic Dawson St and forms part of the entrance to the venue. Subtle references to the history of Lennan’s Yard and Dawson Street can be found throughout the pub. The original shop front design, dating from the early 1900’s, was retained and provides a super opportunity for people watching, while you enjoy a quiet drink.   • There is nothing like The Garden Room in Dublin. In this city, it’s utterly unique.

    As the now-famous Merrion grew, a courtyard garden appeared right in the very heart of the hotel. A formal garden, complete with fountain, overlooked by the drawing rooms and guestrooms on three sides and the blue skies above.

    On the fourth side, to the east, we have created a light and airy space that opens onto the garden and becomes a part of it. This is The Garden Room.

    From the beginning we wanted it to be a less formal affair. Somewhere to unwind and laugh with friends over a refreshingly cold bottle of rosé and a deliciously fresh seafood salad. A secret garden where you’ll find little groups of people who love each other’s company and others, dining alone, happy to enjoy a brief escape with just themselves. Weather permitting, we’ll open those great floor-to-ceiling glass doors to the garden terrace for true al fresco dining.

    Our menus were all painstakingly designed by master head chef Ed Cooney with also including a vegan menu offering created in collaboration with Holly White.

    His idea is to keep everything brilliantly simple. To not over-complicate anything but to help keep The Garden Room a relaxed, informal, sanctuary of sanity. The menus feature modern Irish food from artisan food producers and our wonderful natural harvest from land and sea.

  • When we took over The Legal Eagle, we inherited some of the glorious features, and the building really spoke to us of old-fashioned pub-grub. That style of food is very much in the 'nose-to-tail' world of dining, but the more we thought about it, the more we realised that 'nose-to-tail' (use every bit and don't waste it!!) sits alongside a celebration of vegetables very comfortably! Both are a celebration of produce, and we hope to use some lesser celebrated vegetables and vegetable tops etc.

    Lunch downstairs features a daily - changing roast-in-a-roll, Irish potato flatbreads (Think bacon, cabbage and parsley sauce. Think roasted squash, fig and honey. Think smoked haddock brandade, fennel and duck egg!) and meats from our wood oven, traditional meat platters (hay-smoked ham, corned mutton, haslet, pickles, sourdough etc) and fish platters.

    Dinner downstairs adds roasted bone marrow, rump heart, cauliflower rarebit, Shropshire Blue soufflé and roasted-buttered turnip tops.

    There are twenty craft beers on tap (with a rotating guest tap), and a small, but considered and decidedly un-trendy, classic cocktail list. We are crazy about beer, whiskey and gin but wine is where we started and it remains a driving force for us. We have over 200 wines on a stellar list written with love.

    Past

    The Convent was constructed in 1885 when the Sisters of Mercy were asked to take charge of Clogheen workhouse. It was the same year the sisters also began teaching in the local school.

    When the workhouse system was abolished and the Clogheen workhouse closed, the Sisters continued to teach in the local school and work in the present St. Theresa’s hospital located in the only remaining building of the original workhouse complex. In 1991, the Mercy order decided to sell the Convent and build a lovely bungalow adjacent for the resident nuns, where they still reside to this day.

    Present

    Dermot and Christine Gannon bought the building in 2005 with a vision to create a space where guests could relax and rejuvenate, while enjoying great food and the beautiful Tipperary countryside.

    The Old Convent was born in July of 2006. The daily changing tasting menu was key to fulfilling their goal of using the freshest Irish artisan ingredients, served in the beautiful Chapel Dining Room.
