    Commencing with a simple pre-starter, all the food then arrives together to The Big Table in the style of a Feast and is presented on platters in the centre of the table for guests to pick and choose, mix and match as they wish. Guests are encouraged to help serve the person on both sides of them, helping to add to the conviviality and atmosphere of the table.

    After enjoying The Strawberry Tree dessert plate, guests can help themselves to some wonderful Organic Cheeses, which are kept at perfect temperature in our Wild Foods Pantry.

    Even the menu is presented in a different style in that rather than the recipe been highlighted, it is the supplier, farmer or artisan producer that is named and acknowledged.

    Macreddin Village is known as the Food Village and it's easy to see why. With a variety of venues onsite offering free range, organic and wild food options, you can savour great food in sublime settings.

    The person behind this food philosophy is Evan Doyle. Evan is a member of Euro-toques and has hosted the National Food Forum for many years. He has been strongly connected with The Slow Food Movement in Ireland.

    THE STORY OF GIRL AND THE GOOSE RESTAURANT

    “I would like to take this opportunity to welcome you to my restaurant. I know the name is a little unusual, but there is a bit of story behind it. I wanted to dedicate this restaurant to my little daughter Lea, and we couldn’t find the right name until my friend Ruth came up with logo based on my daughter’s toy – a wooden goose. After few days we came up with the idea of combining Lea’s name and her toy and we came up with the name Lea’s Little Goose. Coincidently, same night I was enjoying my time with a great customer of mine Peter from our Terenure’s restaurant and I mentioned that to him. He pointed me directly to Brother’s Grimm fairy tale The Goose Girl – and that was it – ‘Girl and the Goose’ was born and I am more than happy to share my ‘dream came thru’ in connection with fairy tale – this could be our secret fairy tale.

    In the Girl and the Goose, my goal was to create a relaxed home like experience where anybody can enjoy my homemade traditional Irish dishes. All my dishes are prepared on order by using both traditional and modern cooking techniques from locally sourced high-quality ingredients. In this menu you will find hearty Irish dishes, great to accompany you during your romantic night out, family get togethers or casual dining.

  • Mae was the name of my late grandmother. She was a wonderful cook, and a huge influence on my life. When I thought about opening my own restaurant, she was at the forefront of my list of inspirations, and I knew very quickly I wanted to name the space after her. The French Paradox was a perfect venue, because the influence on family is huge here too, the building has been passed down generations, and I am honoured that the space has been shared on to me.

    An added bonus to this, is mae has access to some of the most incredible wines, direct from vineyards across France with whom the team at The French Paradox has had special relationships with for decades. The menu has been designed with all the above in mind. We want to bring modern, seasonal cooking with superb wine pairings to match. We have an incredibly strong team of front of house, chefs, sommeliers, and suppliers behind us.

    As well as this, we have been working with so many hugely talented trades people, designers and creators from across Ireland; from ceramicists, embroiderers, glass blowers, to some of the most skilled and inspiring knife makers in the country.

    I wanted to highlight not only the food, wine and talent in the restaurant industry, but also the backbones of it. What makes a restaurant feel special, what makes the guest feel special in that restaurant.   • The Brazen Head is located on Bridge Street. This is the area from where the original settlement that was to become Dublin got its name.

    The Irish name for Dublin is Baile Atha Cliath – (pronounced: Ball-ya-Awha-Clia) which means “The Town of the Ford of the Reed Hurdles”.

    Beside the pub is the Father Matthew Bridge crosses the river Liffey. It was at this very spot that the original crossing of the river was located. Here reed matting was positioned on the river bed which enabled travellers to cross safely at low tide.

    The Brazen Head is Ireland's oldest pub. In fact there has been a hostelry here since 1198. The present building was built in 1754 as a coaching inn. However The Brazen Head appears in documents as far back as 1653.

    An advertisement from the 1750’s reads “Christopher Quinn of The Brazen Head in Bridge Street has fitted said house with neat accommodations and commodious cellars for said business”.

  • There is nothing like The Garden Room in Dublin. In this city, it’s utterly unique.

    As the now-famous Merrion grew, a courtyard garden appeared right in the very heart of the hotel. A formal garden, complete with fountain, overlooked by the drawing rooms and guestrooms on three sides and the blue skies above.

    On the fourth side, to the east, we have created a light and airy space that opens onto the garden and becomes a part of it. This is The Garden Room.

    From the beginning we wanted it to be a less formal affair. Somewhere to unwind and laugh with friends over a refreshingly cold bottle of rosé and a deliciously fresh seafood salad. A secret garden where you’ll find little groups of people who love each other’s company and others, dining alone, happy to enjoy a brief escape with just themselves. Weather permitting, we’ll open those great floor-to-ceiling glass doors to the garden terrace for true al fresco dining.

    Our menus were all painstakingly designed by master head chef Ed Cooney with also including a vegan menu offering created in collaboration with Holly White.

    The Georgian doors of this listed 18th century rural residence open up to a haven of four-star comfort, luxury, warm service, great food, and lots of lovely ways to relax.

    We have two different but equally delightful restaurants: Fire & Salt and The Coach House Brasserie. We also have a number of private dining rooms decorated in a manner befitting their location, perfect for a special occasion. Afternoon Tea is available in our spacious, airy Atrium while Parterre, our gorgeous new garden terrace cocktail bar, serves carefully crafted cocktails and light bites.

    Accommodation is in tastefully designed and relaxing guest rooms and self-catering lodges while the Estate is also home to an award-winning, divinely tranquil destination spa.

    We are independently owned, and in lots of little ways – from the warmth of our team to our continual investment in The Estate – we like to think this shows.

    Fire & Salt Restaurant

    Fire & Salt offers relaxed, fine dining in a sophisticated, contemporary space. Our menu features the finest meats, fish, dairy, vegetarian and vegan dishes for all tastes and appetites. Signature dishes include hand-picked beef, dry-aged for up to 36 days in Himalayan sea-salt – our name derives from the fire which seals and caramelises the steak and the salt which seasons it.

    Every dish is thoughtfully designed and matched with tempting sauces, crisp fresh vegetables, and various potato sides.

    Topping off a memorable meal, our desserts are skilfully constructed and beautifully decorated by our very talented pastry chef. They are almost too good to eat … but only if you have the willpower to resist.

    Finally, our wine list is both varied and accessible. We have classic favourites mixed in with a few premium wines and one or two unusual finds for the buffs amongst us.

    The Coach House Brasserie

    Instantly feel at home in the Coach House Brasserie with its booth-seating and roaring fire in Kitty’s Corner. Upstairs, The Loft offers a more refined brasserie-style experience, and when the sun shines, a new, spacious, outdoor terrace to the front of The Coach House seats 50 people in airy, heated comfort.

    The menu at The Coach House includes both casual, modern dishes and traditional, hearty crowd pleasers.

    Pair your meal with a drink from the full bar menu, a signature cocktail or select from a wine list designed to match and enhance the menu.

    Parterre

    The Johnstown Estate’s welcomes you to Parterre, a captivating garden terrace cocktail bar serving impeccable cocktails amidst natural beauty.

    Parterre stands undeniably elegant, a modern glass botanical oasis cleverly designed with a retractable roof, effortlessly transforming the atmosphere from the bright and airy embrace of daylight to the enchanting allure of the evening. This sophisticated space is perfect for casual daytime or evening cocktails and light bites in all seasons.

    Afternoon Tea in The Atrium

    What better pastime than people-watching in a hotel lobby? Relax in soft velvet wing-back chairs, in a space featuring bespoke carpet and original Irish art, bathed in light from the double-height windows and glass ceiling. The Atrium is a place of spacious comfort. It’s a place to talk business, read, savour Afternoon Tea or enjoy a cocktail… all in peaceful contentment.

  • Spread across three floors, The Landmark is situated at the corner of Wexford and Kevin Street. Our welcoming bar boasts a cozy ground floor with couches, snugs and massive windows along the Wexford Street side to allow guests watch the world go by.

    Moving upstairs, our first-floor boasts shared and private spaces that can be reserved for guests. Our top floor features a private space for parties of all types, with its own bathrooms, bars and entrance it is rare find in Dublin’s City Centre.
